There’s something special about cooking over a campfire – the crackle of the flames, the smoky aroma, and the way everything tastes just that little bit better outdoors. Sure, snags and chops are classics, but dessert deserves a place by the fire too. We’ve rounded up a couple of easy, fuss-free treats you can whip up on your next trip: gooey Banana Boats and caramelised Pineapple Rings. Both are simple to make, big on flavour, and guaranteed to keep the whole crew smiling under the stars.

 

🍫 Gooey Banana Boats – Dessert Made Easy

Who needs fine dining when you’ve got a campfire and a banana? This camping classic is a winner with kids and grown-ups alike. Think s’mores… but in a banana skin. Sweet, simple, and no washing up.

You’ll need:

  • 4 ripe bananas

  • 1 block of milk chocolate (or smash up a couple of Tim Tams – very Aussie)

  • A handful of marshmallows

  • Aluminium foil

How to make it:

  1. Slice each banana lengthways (don’t cut all the way through).

  2. Open it up and tuck in chocolate chunks and marshmallows.

  3. Wrap in foil and pop on the edge of the campfire or BBQ for 5–10 mins.

  4. Carefully unwrap and dive in with a spoon – straight from the skin.

🍍 Caramelised Pineapple Rings – Tropical Twist on the Grill

When the sun’s going down and you’ve had your fill of snags, finish the day with this golden beauty. Pineapple + caramel glaze + smoky campfire = magic.

You’ll need:

  • 1 fresh pineapple, peeled, cored, and cut into rings

  • 2 tbsp brown sugar

  • 1 tbsp butter

  • A splash of golden syrup

  • Optional: toasted macadamias or coconut yoghurt

How to make it:

  1. Heat your BBQ or campfire grill.

  2. Melt sugar, butter, and golden syrup in a small pan until bubbling.

  3. Brush the glaze onto pineapple rings.

  4. Grill for 2–3 mins per side until caramelised and a little charred.

  5. Serve hot with extra glaze and toppings if you’re feeling fancy.

🔥 Dirt tip: Short on fresh fruit? A tin of pineapple slices does the job nicely when you’re travelling remote.
